Low Carb Creamy Chicken Stuffed Mushrooms Everyone will Love

Bake 30 Minutes at 350° 

INGREDIENTS
 4 Whole Portobello Mushrooms
 4 Chicken Breasts
 8 oz Cream Cheese
 1 oz Ranch Seasoning
 1 cup Yellow Onion
DIRECTIONS

Bake or grill 4 chicken breasts, OR purchase a cooked rotisserie chicken from your local deli. Shred or roughly chop cooked chicken. Place in a large mixing bowl.

Wash mushrooms and scrape out the insides into the bowl. Chop up the stems and add to the mixing bowl.

Add pulled chicken, diced yellow onion, softened cream cheese, and 1/2 - 1 packet of ranch seasoning (per preference) to the mixing bowl and combine.

Top/stuff each mushroom with the mixture.

Wrap each stuff mushroom in aluminum foil, with the stuffing side up. (Make sure they are well wrapped, because the mushrooms are going to become very juicy.)

Bake or grill for 30 minutes at 400° F or until mushrooms are soft and juicy.

Removed from foil. Serve and enjoy!

TIPS:
  • If you don't like to use aluminum foil, you can bake all of them in a covered pan at once, but the cooking time will increase.
  • Optionally, you can add chopped celery and/or minced fresh basil to the mixture. I only add those when I already have them in the house.
  • If you're making this for guests, you can dress up the appearance. Put cheese on top  (swiss, parmesan, mozzarella, or provolone would work nicely) then broil for 2-3 minutes or until golden, then garnish with fresh minced basil.
